Banana pancakes with blackberry syrup


H picked some blackberries last weekend, it was on the summer list. Here she is contemplating the prickly shrub!


I used my new favourite pancake recipe, that I mentioned in this post and added a mashed banana to the batter mixture. Then I warmed the blackberries in a good glug of maple syrup for about 5 mins on a medium heat and spooned the fruit over the pancakes.

We weren’t sure that banana and blackberries would work together but they did.


The three of us enjoyed them outside as we had a return of the sunshine and those pancakes were wonderful even if I say so myself. That fruity kick lifted the pancakes to another level. Mmmm… and now I’ll have another use for all the blackberries that are in the freezer.
