30 Vegetarian Pizzas – number 1 – Brie, Potato and Rosemary


I have pondered this idea for a while ever since Elise started her pizza extravaganza. I had planned to start this cooking challenge before Christmas but the dark night make photographing so hard and food is a particularly tricky subject. (So apologies for the bad photo.)

But I am keen to get this started and documented as we have pizza most Saturdays and I need to get Gav away from his favorite topping of mixed veg. Not that there is anything wrong with a mixed veg pizza but it will be exciting to try new food combinations. Pizza is our most favourite food!

We use a bread maker to get the dough started then roll it out onto the pizza tray and prove it for about an hour and a half. Our usual dough is just a white flour one. I am sure we’ll try a variation on this as we try different combinations.

Gav is in charge of making the tomato sauce. He said he was taking this recipe to the grave but I prized it out of him…….

  • 1 tin of chopped plum tomatoes
  • 1 onion finely chopped
  • 1 fat garlic crushed
  • 15g butter (yes! butter not oil)
  • 1 tsp dried mixed herbs
  • 3g salt
  • freshly milled black pepper

The cheese of choice for us is almost always a hard Mozzarella that we buy pre-grated in a pack. Although for our first pizza we rang the changes with the cheese.

Pizza number 1 was Brie, Potato and Rosemary and was very delicious although I think more Brie was needed as the potatoes took centre stage. It would be good to try fresh rosemary too or a different herb with the other two ingredients like thyme.
