Almost Homegrown Pasta Sauce


It’s been a while since I have shared a recipe here. At this great time of year we have a little quest, Gav and I to make dinner using as many home-grown ingredients as possible and this pasta dish is the winner so far.

Broad beans, peas, french beans and courgettes with parsley and oregano thrown in for good measure.

And it couldn’t be simpler. Cook said veg – we do the beans and peas in the microwave for 2-3 minutes and the courgettes get a gentle frying in olive oil. We then add more oil, to act as the sauce, seasoning and the cooked pea mix to the courgette pan just before serving. Mix it all together and serve on top of you chosen pasta. Finally add a grating of parmesan and a few more herbs scattered over.

Perfect and delicious and scores a nine on the homegrown front.
