Bircher Muesli

Yay, I can cross something off my list.

There are a lot of recipes out there for this breakfast dish and I know I should have tried the original but didn’t want cream so early in the morning. Instead I used a couple of different recipes and ended up making my first bowlful like this:

  • 30g rolled oats
  • 25ml apple juice
  • 30ml skimmed milk
  • 2 dessert spoons plain yogurt
  • small handful raisins
  • 6 roughly chopped almonds
  • 1 small apple grated
  • 2 plums cooked in microwave for 1 min plus a little sugar

I mixed the oats milk and apple juice and left that to soak for 30 minutes. The I added all the other ingredients.This was enough for one bowl just for me.

I really truly thought it wouldn’t be sweet enough for me or even nice to eat. I was wrong on both counts. I would be tempted to soak overnight just to see how that effected the oats or even make a larger batch of the oat milk mix and leave in the fridge. I went with plums as it made it more wintry but would like to try with summer fruits. The possibilities are endless.

I will be making this every week I’m sure.
